Bring your liquid to a boil, slowly whisk in the grits, reduce heat to low, and let it simmer, stirring frequently, until they're tender and thick. This can take anywhere from 15 minutes for quick grits to an hour for stone-ground. Once they're almost done, stir in a generous knob of butter and a good handful (or two!) of shredded sharp cheddar or Monterey Jack cheese. Season with salt and pepper to taste. The cheese melts into a dreamy, luscious base that perfectly complements the fried fish. Pile those golden-brown catfish fillets high on a bed of your rich, creamy cheese grits. I love to finish mine with a sprinkle of fresh chopped parsley or chives for a bit of color and freshness, and maybe a dash of hot sauce on the side if I'm feeling spicy.
