The sweetness of the roasted cherry tomatoes and garlic, combined with succulent shrimp and a rich, velvety sauce, creates a symphony of flavors that is both comforting and sophisticated. Here’s how I make my favorite creamy shrimp and cherry tomato pasta: Ingredients: 1 pound pasta (linguine, fettuccine, or spaghetti work wonderfully) 1.5-2 pounds cherry tomatoes, halved 6-8 cloves garlic, thinly sliced or minced 1 pound large shrimp, peeled and deveined 2 tablespoons olive oil, plus more for roasting 1/2 cup dry white wine or chicken broth (optional, but adds depth) 1 cup heavy cream 1/2 cup grated Parmesan cheese, plus more for serving 1/4 cup fresh basil or parsley, chopped Salt and freshly ground black pepper to taste Red pepper flakes (optional, for a little kick) A drizzle of balsamic glaze (optional, for finishing) Instructions: Roast the Cherry Tomatoes & Garlic: Preheat your oven to 400°F (200°C).
