✨ Creamy tuscan salmon with mash and asparagus✨
Quick and easy date night dinner that will impress but not make a mess💅🏽
🍴 What you’ll need:
* 4-6 medium russet potatoes
* 1 lb asparagus
* 1 bulb garlic (separated)
* 1 shallot
* 1/2 cup sun dried tomatoes (save some oil)
* 1/2 of a lemon
* Handful (or 2) spinach
* 1 1/2 -2 cups heavy cream (separated)
* 1/4 milk
* 1/4 Parmesan (to finish)
* 2 Tb butter
* Seasonings of choice ( I used chicken bouillon, Italian seasoning,Morton’s season all, lawry’s garlic salt,paprika,Tony’s creole, old bay, garlic powder,onion powder
👩🍳 How to make it:
1️⃣ PREP: Peel and cut 4-6 russet potatoes ( I only peel half) add to pot with cold water, 1 Tb chicken bouillon, and Italian seasoning Boil.
2️⃣ Break off asparagus ends and put into baking dish with 1 tsp olive oil, 4 cloves of garlic, season all and garlic salt. Put in the oven at 350°F
3️⃣ Chop shallot, rest of garlic, sun dried tomatoes, and spinach. Set aside separately.
4️⃣ Season salmon skin with sea salt. ( everything else is heavily salted don’t come for me)
5️⃣ Cook salmon skin side down in PIPING hot pan with a tsp oil(cast iron is best) ensure to press down to get a even sear and crispy skin. Remove from pan and let stand.
6️⃣ In the same pan sauté chopped garlic,shallot,sun dried tomato and its oil.
7️⃣ Deglaze pan with half of a lemon then add in 1-11/2 cups of heavy whipping cream with desired seasonings and let simmer till slightly thickened
8️⃣ While sauce is thickening mash the potatoes with 1/4 heavy cream and 1/4 milk warmed. Season to taste
9️⃣ Plate up and enjoy!!!
