1) Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
2) Add green pepper and onion; cook and stir until onion has softened and turned translucent, about 5 minutes.
3) Add tomatoes, tomato sauce, broth, thyme, and sage; season with salt and pepper. Cover and simmer until peppers are tender, about 30 to 45 minutes.

If you're looking for a nourishing and filling soup that warms both the body and soul, this stuffed pepper soup recipe fits the bill perfectly. The combination of ground sirloin and green bell peppers provides a satisfying protein and vegetable base, while the fragrant herbs like thyme and sage add layers of flavor that complement the tomato broth beautifully. One of the great things about this recipe is its flexibility. You can easily adapt it to your taste or what you have available in your pantry. For a lower carbohydrate version, you can substitute the white rice with cauliflower rice or quinoa. Alternatively, mixing in some black beans or lentils can add an extra boost of nutrients and fiber. When preparing this soup, browning the ground sirloin thoroughly enhances the depth of flavor and texture, ensuring every spoonful is hearty. Simmering the soup for 30 to 45 minutes allows the peppers to soften and meld with the tomato-based broth, creating a rich, savory liquid that is both comforting and wholesome. This recipe also lends itself well to batch cooking and freezing for future meals. Simply cool the soup completely before transferring it to airtight containers, and reheat gently on the stove or in the microwave. It makes an excellent packed lunch or an easy dinner during busy weeknights. For added freshness, consider garnishing your stuffed pepper soup with chopped fresh parsley or a sprinkle of grated Parmesan cheese. A side of crusty bread or a green salad pairs wonderfully to round out the meal. Whether you're cooking for family or friends, this stuffed pepper soup offers a delightful way to enjoy classic flavors in a warm, satisfying bowl. Give it a try and experience how simple ingredients can come together to create something truly special and comforting during chilly days.
