Making Onde-Onde at home is a rewarding experience that allows you to enjoy authentic Indonesian flavors with fresh ingredients. One tip that I found helpful is to soak the mung beans longer than two hours, sometimes overnight, to ensure they are fully softened and yield a smoother filling. During the frying process, using a low to medium flame is crucial, as the dough can break if the oil is too hot. Squeezing or gently pressing the balls as they start to expand helps maintain their round shape and ensures even cooking. Another useful trick is to add a bit of pandan leaf while steaming the mung beans, enhancing the fragrant aroma that beautifully complements the sweetness. Also, when rolling the dough around the filling, be careful to seal the edges completely to prevent any filling from leaking during frying. Coating the balls evenly in sesame seeds not only adds flavor but also gives a nice crunchy texture contrast to the chewy exterior. For those who prefer a vegan option, using margarine or coconut oil works well in the dough to replace butter without compromising softness. Serve Onde-Onde fresh and warm for the best taste experience, as they tend to lose some texture if left out for too long. This homemade version is a delightful treat that brings a taste of Indonesian culture right into your kitchen, perfect for sharing with family and friends.
