Whether you're a baking enthusiast or a beginner, this recipe is straightforward and fun to make. Start by gathering your ingredients: ripe bananas, melted butter, sugar, an egg, flour, baking soda, baking powder, cinnamon, salt, and, of course, pecans. Preheat your oven to 350 degrees Fahrenheit and prepare your muffin tin. In a mixing bowl, mash the ripe bananas thoroughly, then mix in the melted butter until combined. Stir in the sugar, egg, and vanilla extract before adding the dry ingredients: flour, baking soda, baking powder, cinnamon, and salt. Finally, fold in the pecans, reserving some for the topping. Scoop the batter into the muffin tin and sprinkle with extra pecans on top. Bake them for around 23 minutes or until a toothpick comes out clean. Let them cool slightly before enjoying these moist, flavorful muffins! For those looking to tailor this recipe, consider adding chocolate chips or dried fruit for even more flavor. Serve them warm with a dollop of butter or your favorite spread. These muffins are an ideal snack for any time of day, providing a delicious balance of flavor and nutrition.
