Cajun Baked Potato Soup

Ingredients:

- 5 russet potatoes, peeled and diced into cubes.

- 3 large carrots, peeled and diced.

- 3 celery stocks, diced

- Half a white onion, diced

- 4 cups of vegetable broth

- Diced andouille sausage

- 8 ounces of cream cheese

- Shredded cheddar cheese for topping

- Diced green onion for topping

- Three pieces of bacon cooked and chopped for topping

Seasoning:

- pepper

- Cayenne

- Chili powder

- Garlic powder

- Ground thyme

- Slap ya mama seasoning to taste

Instructions:

- In a pot, add your onion, celery and carrots and sauté until softened. Add in your seasonings and allow to bloom.

- Add in your potatoes, and vegetable broth. Cook until potatoes are soft.

- Brown your andouille sausage and set aside.

- Blend with an immersion blender until smooth.

- Add in your cream cheese and mix in until combined.

- Add in your andouille sausage and mix throughly.

- Serve hot, topped with green onion, cheddar cheese and chopped bacon.
