Lentil Vegetable Soup 🥣

- 1 cup of red lentils

- 1 white onion, diced

- 4 large carrots, diced

- 4-6 celery stalks, diced

- 6 cups of vegetable broth

- 1 can of diced tomatoes

- 1 can of chickpeas

- handful of chopped spinach

Spices:

Garlic powder, salt, red pepper flakes, oregano, rosemary, thyme, cumin

Sweat down the onion, carrots and celery. Season.

Add broth, lentils, canned tomatoes, and chickpeas. Season second layer.

Mix in and cover for 10 minutes.

Let simmer until lentils are softened.
