Braised steak with peppers gravy

Pepper Gravy:

Salt and pepper, to taste

2 tablespoons olive oil

1 large onion, chopped

1 large pepper

3 cloves garlic, minced

2 celery stalks, sliced

1 cup red wine (optional, can substitute with beef broth)

2 cups beef paste or broth

1 can (14 oz) diced tomatoes

1 bay leaf

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons tomato paste

Instructions:

Season the meat: Season the steak * I used S&P onion Powder, Garlic Powder, and brown sugar bourbon.

Brown the meat: Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the steak in batches and brown on all sides, about 3-5 minutes per batch. Remove and set aside.

Sauté vegetables: In the same pot, Cook until softened, about 5 minutes.

Deglaze: Add the red wine to the pot, scraping up any browned bits from the bottom. Let it simmer and reduce by half.

Add liquids and seasonings: Return the beef to the pot. Add beef broth, diced peppers, tomato paste, bay leaf, thyme, and rosemary.

Simmer: Cover and lower the heat to a gentle simmer. Cook for 1.5 to 2 hours, or until the meat is tender and falling apart.

Finish and serve: Remove the bay leaf. Taste and adjust seasoning if needed. Garnish with chopped parsley. Serve hot with mashed potatoes, rice, or crusty bread.
