Simple & Easy At Home Penne Alla Vodka Recipe 🍝

Easy Pasta Recipe 🍅

Serves 2-4 People

Ingredients:

- 8 oz Penne Pasta

- Parmesan & Romano Grated Cheese (You can get just regular parmesan but the mixture of both gives it a nice cheesy tang + bite to the dish)

- 1 Tbsp Olive Oil

- 1 Garlic Clove (minced)

- 2 Tbsp Butter

- 1/4 Cup of Vodka (you can also get a tiny cheap vodka shot/shooter)

- 1/4 Cup Tomato Paste

- 3/4 Cup of Heavy Cream

- 2 Tbsp of Reserved Pasta Water

My all time favorite Italian dish! It’s creamy, cheesy, and comforting! You can even just get a pre-made pasta sauce to throw on top of some penne pasta and boom, a quick and easy dinner for 2-4 or all to yourself 😉

... Read moreGetting ready for a perfect 'pasta night at home' is one of my favorite ways to unwind, and this creamy Penne Alla Vodka recipe is always my go-to! While the recipe itself is super straightforward, I've picked up a few tips over the years to make your at-home pasta night even more special and stress-free. First off, don't sweat the vodka. As the recipe mentions, you don't need a top-shelf bottle. A small, inexpensive shooter works perfectly fine because the alcohol cooks off, leaving just that subtle, essential flavor profile. If you're hesitant about using alcohol, some people substitute with a splash of white grape juice or even just vegetable broth, though it won't be quite the same classic taste. Trust me, the real magic happens when the vodka combines with the tomato and cream to create that signature silky sauce. When it comes to cheese, the original recipe hits the nail on the head with the Parmesan & Romano blend. It truly adds depth and a fantastic tang compared to just using one. I always grate my own cheese if I have time; it melts smoother and tastes fresher. For busy weeknights, pre-grated is totally fine, but a fresh block makes a difference for that extra special 'pasta night' feel. And don't forget a little extra for topping! The visual of a red pot of creamy Penne Alla Vodka pasta (just like in the picture!) topped with fresh cheese is just so inviting. To really elevate your 'pasta night,' think about what goes with the pasta. A simple side salad with a vinaigrette dressing cuts through the richness of the pasta beautifully. And garlic bread? Absolutely essential! You can buy a frozen loaf or easily whip up your own with some butter, minced garlic, and parsley on a baguette. For drinks, a dry rosé or a light-bodied red wine pairs wonderfully. If you're skipping alcohol, sparkling water with a lemon twist or a refreshing Italian soda makes it feel festive. Another tip for an amazing 'pasta night at home' is to be prepared. While this recipe is quick, having all your ingredients prepped (mise en place!) makes the cooking process so much smoother. Chop your garlic, measure your liquids, and have your tomato paste ready. And remember that reserved pasta water! It's truly a secret weapon for achieving that perfectly emulsified, glossy sauce. If your sauce ever feels too thick, a splash of that starchy water will bring it all together. Thinking about variations? This Penne Alla Vodka is incredibly versatile. For added protein, I sometimes sauté some shrimp or cooked chicken and stir it in at the end. A sprinkle of red pepper flakes can give it a nice kick if you like a bit of spice. You can also add some sautéed mushrooms or spinach for extra veggies. It’s your 'pasta night,' so make it exactly how you like it! Making this dish is about more than just food; it's about creating a comforting experience. So put on some music, light a candle if you're feeling fancy, and enjoy the process of cooking a delicious meal for yourself or your loved ones. There's nothing quite like a homemade, creamy Penne Alla Vodka to make any night feel special.
