Thai Coconut Curry Chicken

Ingredients:

1 lb chicken breast, cut into bite-sized pieces

1 can (14 oz) coconut milk

1 red bell pepper, sliced

1/2 onion, chopped

2 tosp red curry paste

1 tbsp fish sauce (optional)

1 tosp olive oil or coconut oil

1 tsp ginger, grated

2 cloves garlic, minced

Fresh basil leaves

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Directions:

Cook the Chicken: In a large skillet, heat oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden, about 5 minutes. Remove from skillet and set aside.

Sauté Aromatics: In the same skillet, add onions, garlic, and ginger. Cook until fragrant, about 2 minutes.

Add Curry Paste: Stir in red curry paste, cooking for an additional 1 minute.

Simmer: Pour in coconut milk and fish sauce, and add bell pepper. Bring to a simmer, then return chicken to the skillet. Let simmer until chicken is cooked through, about 10 minutes.

Finish with Herbs: Stir in fresh basil leaves and cook for an additional 1-2 minutes.

Serve: Garnish with fresh cilantro and serve over jasmine rice. Enjoy!
