Quick Classic Strawberry Shortcake

Did you know that strawberry shortcake was originally made with scones? I definitely didn’t.

To make this recipe even simpler you can buy some cool whip or canned whipped cream. I do prefer the flavor of homemade whipped cream but you do not have to make it homemade.

Ingredients:

1lb of strawberries

1 can of biscuits (flaky or homestyle)

1 cup of heavy whipping cream

1/3 cup of sugar

3 TBS of unsalted butter

2 TBS powdered sugar

1/2 tsp vanilla

I normally go for the flaky kind because they absorb all that delicious strawberry juice so well, but homestyle works great too if you like a denser base. A little trick I picked up: after splitting and brushing them with butter for that golden finish, sprinkle a tiny bit of sugar on top before baking. It gives them a lovely crust and extra sweetness. If you're really in a pinch, store-bought dessert shells work perfectly too! They're already portioned and ready to go, making assembly a breeze, and they still deliver that classic shortcake experience. Beyond the canned biscuits and store-bought whipped cream (which, let's be honest, is totally fine if you're short on time!), there are other ways to speed things up. While fresh strawberries are ideal, pre-sliced frozen strawberries can work in a pinch for macerating – just give them a little more time to thaw and release their juices. And if you don't have a stand mixer, a hand mixer or even a whisk and some elbow grease will get that heavy cream whipped up beautifully – just make sure it's super cold for the best results! These small shortcuts mean you can enjoy this delightful dessert even on a busy weeknight. One of my absolute favorite things to do for summer gatherings is set up a 'Build Your Own Strawberry Shortcake Bar'! It's such a fun, interactive dessert that everyone loves, and it takes the pressure off you. Here's how I set mine up: The Base: Offer both canned biscuits (baked and split) and maybe some ready-made dessert shells. Some people love a soft biscuit, others prefer a crispier shell – variety is the spice of life! The Berries: Of course, plenty of those macerated fresh strawberries! Make sure they're pre-sliced and sweetened, ready to spoon. You could even add a small bowl of mixed berries (blueberries, raspberries) for extra color and flavor. The Cream: A big bowl of homemade whipped cream is a must for that classic richness, but also have a can of whipped cream handy for those who prefer it or to supplement if you run out. Sometimes I'll even add a bowl of vanilla ice cream for an extra treat! Fun Toppings: This is where you can get creative! Mini chocolate chips, a drizzle of chocolate sauce, chopped nuts (like pecans or almonds), toasted coconut flakes, or even a sprinkle of cinnamon sugar. These little additions really make it special and let guests customize their perfect shortcake. Presentation: Lay everything out on a nice platter or tiered stand. Provide small plates and spoons, and let your guests go wild! It’s such a conversation starter and takes virtually no effort once everything is prepped.
