Chicken Meatballs w/ Parmesan Rice 🥘 🍚
I came up with this dinner idea and I wish there were leftovers‼️😋
I measure with my heart but here’s an idea. ⬇️
~Ingredients for meatballs~
• 1lb ground chicken
• 1/4 cup of flour
• chicken bouillon
• garlic powder
• onion powder
• salt
• pepper
• 1 and 1/2 cups of heavy cream
• 1 lemon
• 3 tbsp of butter or more 😂
• oil ( I don’t know how much, just make sure you have enough 🤪).
~Ingredients for Rice~
• 1 cup white rice
• 1 cup chopped spinach
• half a cup of shredded parmesan
• 1 tbsp of butter
• chicken bouillon
~Instructions for Meatballs~
• mix the ground chicken, flour, 1 tbsp chicken bouillon, and seasonings.
• drizzle oil and a tablespoon of butter in a saucepan over medium heat.
• form meatballs and sauté on all sides until golden brown
• remove meatballs and drain pan
• add a tablespoon of butter, heavy cream, a squeeze half the lemon.
• season to your liking and simmer the sauce for 5 minutes while stirring.
• add meatballs back and let simmer for 5 minute while coating the meatballs with the sauce.
~Instructions for Rice~
•add a tablespoon of butter to a pot.
• rinse rice and add to the heated pot with the spinach.
• once the spinach is cooked down, add two cups of water and 1 tablespoon of chicken bouillon.
•cover rice and cook for 10 minutes or rice appears fluffy and there’s no more water visible.
• add Parmesan cheese and stir well.
• cover rice, remove from heat, and let sit for 5 minutes.
