🖤 Crockpot Black Beans and Rice (with Canned Beans)
🥣 Ingredients
• 2 cans black beans, drained and rinsed
• 1/2–1 cup white rice (uncooked)
• 1 small or medium onion, diced
• 1 bell pepper, chopped
• 1 jalapeño or spicy pepper (optional), chopped
• 1–2 teaspoons rice seasoning (or use taco seasoning, cumin, or garlic powder)
• 2 1/2 cups broth or water
• Salt and pepper to taste
🌿 Optional Add-ins
• 2 cloves garlic, minced
• 1/2 teaspoon smoked paprika or chili powder
• 1 tablespoon olive oil for richer flavor
• Juice of 1 lime or chopped cilantro for garnish

🧑🍳 Instructions
1. Add everything except the rice to your crockpot:
• Drained black beans
• Onion, bell pepper, jalapeño
• Seasoning and broth/water
2. Stir in the uncooked white rice. Mix well so everything is evenly distributed.
3. Cook on HIGH for 2–3 hours or LOW for 4–5 hours, until the rice is tender and most of the liquid is absorbed.
4. Taste and adjust seasoning. Add salt, pepper, or a squeeze of lime juice.
5. Serve hot as a main dish, side dish, or stuff into wraps/tacos.
