Ingredients:

For the Turkey:

• 1 whole turkey (10–12 lbs)

• 1/2 cup lime or lemon juice (for cleaning)

• 4 tbsp olive oil

• 4 tbsp unsalted butter, melted

• 1 tbsp smoked paprika

• 1 tbsp ground allspice

• 2 tsp garlic powder

• 2 tsp onion powder

• 1 tsp cayenne pepper (optional for heat)

• 1 tbsp dried thyme

• 2 tsp ground black pepper

• 1 tbsp sea salt

• 1 cup fresh cilantro, finely chopped

• 1 cup green seasoning (see below)

For the Green Seasoning:

• 1 bunch cilantro

• 1 bunch parsley

• 4 green onions

• 4 garlic cloves

• 1/2 bell pepper

• 1 small onion

• 1 Scotch bonnet pepper (remove seeds for less heat)

• 1/2 cup olive oil

• Juice of 1 lime

• Salt and pepper to taste

For the Stuffing (Optional):

• 2 cups cooked rice

• 1 cup black beans

• 1/2 cup chopped mango

• 1/2 cup chopped pineapple

• 1/4 cup raisins

• 1/2 tsp ground cinnamon

• Salt and pepper to taste

Instructions

1. Prepare the Turkey:

• Clean the turkey with lime or lemon juice, rinse, and pat dry.

• Mix olive oil, melted butter, and all dry seasonings (paprika, allspice, garlic powder, onion powder, cayenne, thyme, black pepper, salt).

• Rub the mixture generously over the turkey, including under the skin and inside the cavity.

• Blend all green seasoning ingredients in a food processor until smooth. Rub it all over the turkey.

• Cover and marinate in the fridge for 12–24 hours.

2. Prepare the Stuffing:

• Mix the cooked rice, black beans, mango, pineapple, raisins, cinnamon, salt, and pepper.

• Stuff the turkey cavity with the mixture (optional).

3. Cook the Turkey:

• Preheat the oven to 350°F (175°C).

• Place the turkey breast-side up in a roasting pan.

• Tent the turkey with foil and roast for about 13–15 minutes per pound. Baste the turkey every 30 minutes with the pan drippings.

• During the last 30 minutes, remove the foil for a golden, crispy skin.

• Use a meat thermometer to ensure the thickest part of the breast reaches 165°F (74°C) and the thighs 175°F (80°C).

4. Serve:

Let the turkey rest for 20–30 minutes before carving. Serve with your favorite Caribbean-style sides like fried plantains, sweet potato mash, or a tangy coleslaw.
