Caribbean Chili Recipe
Ingredients:
• 1 medium leek, sliced
• 2 celery stalks, diced
• 2 bay leaves
• 1 teaspoon fresh rosemary leaves, finely chopped
• 2 medium carrots, diced
• 1 can (14 oz) diced tomatoes (or 2 tablespoons tomato paste)
• 1 lb ground turkey
• 1 teaspoon kosher salt or sea salt (adjust to taste)
• 1 habanero pepper, finely chopped (or 1 tablespoon Louisiana Supreme Hot Sauce)
• 1 teaspoon lemon & pepper seasoning
• 1 teaspoon onion powder
• 1 small onion, finely diced
• 1 sweet pepper (bell pepper), diced
• 4 sprigs of fresh thyme
• 1 teaspoon ground turmeric
• 1/2 teaspoon cayenne pepper (adjust to heat preference)
• 1 tablespoon chili powder
• 1 can (15 oz) red kidney beans, rinsed and drained
• 1 tablespoon olive oil (for cooking)
• 1 cup water or low-sodium chicken broth (adjust for desired consistency)
Instructions:
1. Prepare Ingredients:
Chop all vegetables and herbs. If using a habanero, remove seeds if you prefer less heat.
2. Sauté Aromatics:
In a large pot or Dutch oven, heat olive oil over medium heat. Add the leek, celery, onion, and sweet pepper. Sauté for 3-4 minutes until softened.
3. Cook Turkey:
Push the vegetables to the side of the pot and add the ground turkey. Cook, breaking it up with a spoon, until no longer pink.
4. Add Seasonings:
Stir in rosemary, thyme, bay leaves, lemon & pepper seasoning, onion powder, turmeric, cayenne pepper, and chili powder. Cook for 1-2 minutes to toast the spices.
5. Add Liquids:
Stir in the diced tomatoes (or tomato paste), kidney beans, and water/broth. Mix well.
6. Simmer:
Add the chopped habanero or hot sauce and bring the mixture to a simmer. Cover and cook on low heat for 20-25 minutes, stirring occasionally.
7. Taste and Adjust:
Remove bay leaves and thyme sprigs. Taste the chili and adjust seasoning with additional salt, hot sauce, or chili powder as needed.
8. Serve:
Ladle the Caribbean chili into bowls. Serve on its own or with rice, crusty bread, or plantain chips.
Optional Garnish:
Top with fresh cilantro, a squeeze of lime, or diced avocado for extra flavor!
