Salmon BLT Sandwich

• 2 salmon fillets (4–6 oz each)

• 4 slices of thick-cut bacon

• 4 slices of sourdough or ciabatta bread, toasted

• 1 cup arugula or fresh lettuce

• 1 large tomato, sliced

• 2 tbsp olive oil

• Salt and pepper, to taste

Yellow sweet onion slices

Cheddar cheese or Sharp or whatever you like

For the Lemon-Dill Aioli:

• ½ cup mayonnaise

• 1 tsp lemon juice

• 1 tsp fresh dill, chopped (or ½ tsp dried dill)

• 1 small garlic clove, minced

• Pinch of salt

Instructions

1. Prepare the Lemon-Dill Aioli:

• In a small bowl, mix mayonnaise, lemon juice, dill, minced garlic, and a pinch of salt. Set aside.

2. Cook the Bacon:

• Fry the bacon in a skillet over medium heat until crispy. Drain on paper towels.

3. Cook the Salmon:

• Heat olive oil in a non-stick pan over medium heat.

• Season salmon fillets with salt and pepper, garlic,”slap ya mama” or whatever seasoning you like: then cook for 3–4 minutes per side or until cooked through.

4. Assemble the Sandwich:

• Layer arugula (or lettuce), tomato slices, cooked salmon, and crispy bacon on the bottom slice.

• Top with the second slice
