CHEESY STUFFED BELL PEPPERS

Ingredients:

🍋4 large red bell peppers

🍋1 tablespoon olive oil

🍋1 small onion, finely chopped

🍋2 cloves garlic, minced

🍋1 cup cooked rice (or quinoa)

🍋1 cup shredded mozzarella cheese

🍋1/2 cup grated Parmesan cheese

🍋1 cup diced tomatoes (canned or fresh)

🍋1/2 teaspoon Italian seasoning

🍋Salt and pepper to taste

🍋Fresh basil, chopped (for garnish)

Instructions:

1. Prepare the Peppers: Preheat the oven to 375°F (190°C). Slice the bell peppers in half lengthwise and remove the seeds and membranes. Place them in a baking dish, cut side up.

2. Make the Filling: In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3 minutes. Add garlic and cook for another 1-2 minutes until fragrant.

3. Combine Ingredients: In a large bowl, mix the cooked rice, mozzarella cheese, Parmesan cheese, diced tomatoes, Italian seasoning, salt, and pepper. Stir in the cooked onions and garlic.

4. Stuff the Peppers: Spoon the filling mixture into each pepper half, pressing down gently to pack it in.

5. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, until the cheese is melted and bubbly.

6. Garnish and Serve: Remove from the oven and sprinkle with freshly chopped basil before serving.
