These are my top 3 favorite breakfast roll recipes, they each come together incredibly fast, so they are perfect for workday mornings, when you don’t have a lot of time to cook. Each of these recipes makes 1 serving.

Green Goddess Breakfast Roll:

Ingredients:

1 tbsp Pesto

3 large Eggs

Feta

half of an Avocado (mashed)

Butter for pan

handful of Spinach

1 tbsp Almond milk

Tortilla wrap

Salt & pepper

Directions:

1. In a small bowl whisk together your eggs, milk, pesto, salt, & pepper. Heat a large pan over medium heat & add a little butter. When your butter is melted and pan is hot, add eggs and a handful of spinach, and let cook for a few minutes, using a spatula to turn every so often.

2. Lay your tortilla (room temp) on a plate and spread your mashed avocado evenly on your tortilla. When your eggs aren’t shiny anymore, take off the burner and add to your tortilla in a line down the middle, add feta, and wrap your tortilla, bringing the sides together and overlapping. Return to the pan, and cook for a few minutes (both sides) cut in half and enjoy!

Spinach & Goat Cheese Breakfast Roll:

Ingredients:

3 large Eggs

Goat cheese

1 tbsp Almond milk

handful of Spinach

tortilla wrap

Butter for pan

handful of Cherry tomatoes (halved)

Salt & pepper

Directions:

1. In a large pan with a little butter, heat over medium heat. When hot, add your tomatoes, salt, and pepper, and let cook until softened for a few minutes. Then add spinach and cook until wilted.

2. Once spinach is wilted add your eggs (whisked with a little milk), add in some crumbled goat cheese, and let cook for a few minutes, turning every so often.

3. Once cooked, add to your tortilla in a line down the middle, wrap it together, and return to pan for a few minutes to cook on each side. Cut in half and enjoy!

Southwest Breakfast Roll:

Ingredients:

3 eggs

Almond milk

Handful of tater tot’s

1/8 cup of corn

1/8 cup of black beans

1/3 of a red pepper (chopped)

Sprinkle of taco seasoning

Turkey sausage

Tortilla wrap

Shredded cheddar cheese

Directions:

1. Thoroughly cook your turkey sausage and set aside. Cook your tater tot’s in air fryer according to package directions. In a pan, add your butter and red peppers, cook until softened, add your eggs (whisked with milk) and add your corn, beans, and seasoning. Turning occasionally until eggs are not shiny.

2. Lay your tortilla out and add your eggs, turkey, tater tot’s , and shredded cheddar cheese. Wrap up, and return to pan cooking for a few minutes each side, until crispy and cheese inside is melted. Cut in half & enjoy!
