For the cake bars:

1 cup finely grated carrot (about 1 large carrot)

1/3 cup unsweetened shredded coconut

3/4 cup oat flour

2 tbsp almond flour

1/3 cup maple syrup

2-3 tbsp melted coconut oil

1 tsp vanilla extract

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp baking powder

Pinch of salt

Directions:
