Ratatouille Recipe
I made Ratatouille for the first time the other day. It was actually super easy and delicious!!
Here’s how to make it yourself!
Time to make: 1 hour
Ingredients:
♡ 1 medium eggplant
♡ 1 medium zucchini
♡ 1-2 medium carrots
♡ 1 medium onion
♡ 2-3 cloves garlic
♡ 4 ripe tomatoes
♡ 1/4 cup olive oil
♡ 1 tsp dried thyme
♡ 1 tsp dried basil
♡ Salt and pepper to taste
♡ Fresh basil for garnish (optional)
Instructions:
1. **Prepare the Sauce:**
- **Onion and Garlic:** Thinly slice the onion and mince the garlic. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the onion and garlic until translucent.
- **Tomato Base:** Dice the tomatoes and add them to the skillet. Season with salt, pepper, thyme, and basil. Cook for about 10 minutes until the mixture thickens slightly. Spread this sauce evenly in the bottom of a baking dish. (You can also use a can of crushed tomatoes for this step!)
2. **Slice the Vegetables:**
- Use a mandoline or sharp knife to thinly slice the eggplant, zucchini, carrots, and tomatoes. Aim for uniform thickness (about 1/8 inch). The thinner the better!
3. **Assemble the Ratatouille:**
- Preheat your oven to 375°F (190°C).
- Layer the sliced vegetables on top of the tomato sauce in a circular pattern, alternating between the different vegetables. You can stack them slightly for a visually appealing presentation. I like to make sure there is a variety in colors~
4. **Drizzle with Olive Oil:**
- Once assembled, drizzle the remaining olive oil over the top of the vegetables. Season with a little more salt and pepper.
5. **Bake:**
- Cover the dish with parchment paper or aluminum foil and bake for about 30-40 minutes. Remove the cover and bake for an additional 10-15 minutes until the vegetables are tender.
6. **Serve:**
- Garnish with fresh basil if desired. Serve warm as a main dish or side. You can also freeze the leftovers!
