Curry Chicken Patty Eggplant Wrap

Tried the viral eggplant wrap. I’ve had curry eggplant before so naturally the curry chicken patty paired well. I added Greek yogurt with a teaspoon of curry paste, some arugula and wrapped it up. The cheese I used on the eggplant was thinly shredded mozzarella and shredded Parmesan. After laying the sliced eggplant out, I sprinkled some salt on it to pull the water out and pat it dry before transferring it to a sheet pan of cheese. I baked it for 20 minutes in a 400°F preheated oven.
