Easy Shortbread Cookies 💛

2 1/4 c Flour

1 tsp salt

2 tsp corn starch

2 sticks unsalted butter

3/4 c sugar

1tbsp vanilla

2 tsp almond

1 large egg YOLK

FIRST: beat your butter & sugar until smooth .

THEN : add your egg yolk , vanilla , almond & combine until well incorporated .

AFTER: you will add in your flour , salt , & corn starch and mix until it forms a ball .

FINALLY : add 1 tbs of dough onto a cookie pan lined with parchment paper, with a tsp press the bottom of it into the center of the cookie and fill it with 1-2 tsp of jam/jelly . Bake at 350 for about 12-14 minutes .

NOTE: they will turn slightly brown at the bottom that’s how you know they are done .

Jam Recipe

2 cups frozen berries (I did raspberries & blueberries )

3/4 c sugar

2 tbs lemon juice

In a small pot boil berries , sugar , lemon juice .

In the beginning it will look very crumbly , but give it time it will all begin to combine keep in mind you must stir to make sure it doesn’t burn .

Boil for about 10 mins stirring consistently , the jam should start to slightly thicken .

After it is done take your pot off the heat and allow it to cool about 5-8 mins in the pot .

Once slightly cooled transfer to a glass jar and allow it to come to room temp . Then you will place it in the fridge !

If you don’t have the time for homemade jam this cookie works best with peach , raspberry , or blueberry jam . I haven’t tried any others so far but I’m sure blueberry would taste delicious too !!
