30 Min - Lemon Ricotta Pancakes 🍋
I rolled out of bed dreaming about these pancakes with raspberry syrup and it was worth it ! I hope you enjoy !
This recipe makes about 6 pancakes so double or triple for more ! 💛
Lemon Ricotta Pancakes Ingredients 🍋:
1 cup ricotta cheese
1 cup milk
2 eggs
2 -4 tablespoons sugar (preference , if you want it semi sweet I’d say 4 )
1 teaspoon vanilla extract
Zest of 2 lemons
4 tablespoons lemon juice (juice from about 1–2 large lemons)
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
instructions :
Whisk all the wet ingredients together (ricotta, milk, eggs, sugar, vanilla, zest, lemon juice).
Add the dry ingredients (flour, baking powder, salt); stir gently until just combined.
Cook on medium heat, about 1/4 cup per pancake, 2–3 minutes per side.
Serve warm with your favorite toppings I did raspberry syrup , powdered sugar ,& lemon zest !
🍓 Easy Microwave Red Raspberry Syrup
Ingredients:
1 cup frozen red raspberries
2–3 tablespoons sugar (adjust to taste)
1 teaspoon lemon juice (optional, brightens flavor)
1–2 teaspoons cornstarch + 2 teaspoons water (optional, for thickening)
Microwave the Berries:
In a microwave-safe bowl, add raspberries and sugar.
Microwave on high for 1 to 1½ minutes, until juicy and bubbling.
Mash and Strain (Optional):
Mash the berries with a fork. If you prefer a smooth syrup, strain through a fine mesh sieve to remove seeds.
Thicken (Optional):
If you'd like it thicker, stir together cornstarch and water in a small cup.
Add to the hot syrup, mix well, and microwave for 30–60 seconds more, until it slightly thickens.
Add Lemon (Optional):
Stir in lemon juice for brightness.
