Chilaquiles is a beloved Mexican breakfast dish that combines tortilla chips with a vibrant salsa and various toppings. This recipe showcases a Pasilla Ancho Roasted Salsa packed with deep, smoky flavors from pasilla and ancho chili pods, balanced with the heat from chile arbol and serrano peppers. The inclusion of fresh Roma tomatoes, sautéed onions, and garlic cloves enhances the salsa’s depth and freshness. When preparing chilaquiles, it’s important to tailor the heat level to your preference – adding more Roma tomatoes will mellow the spice, while extra serranos or chile arbol will give it a fiery kick. To begin, cleaning the tomatoes and peppers carefully ensures a clean flavor base. Sautéing the onions, garlic, and chiles in avocado oil caramelizes their natural sugars and enriches the salsa's complexity. Quickly blending the ingredients preserves a rustic texture that's perfect for coating tortilla chips. For the crispiest results, lightly fry fresh tortilla chips in avocado oil until golden before tossing them in the warm roasted salsa. This dish can be accompanied by traditional toppings such as crema, queso fresco, chopped onions, and fresh cilantro. Chilaquiles also serve as a versatile and satisfying meal, excellent for breakfast, brunch, or even a quick dinner. The recipe’s flexibility allows cooks to customize it further with additions like fried eggs, shredded chicken, or beans for extra protein. Exploring regional variations of chilaquiles can lead to delightful discoveries—it’s a dish deeply embedded in Mexican culinary heritage, enjoyed across households and street vendors alike. This particular salsa blend offers a deliciously smoky and spicy sauce that complements the corn’s natural sweetness in the tortilla chips. Using a cast-iron skillet for sautéing maximizes heat retention, leading to perfectly softened vegetables infused with aroma. Whether you’re new to Mexican cooking or a fan looking to try an authentic take, this chilaquiles recipe highlights the balance of spice, texture, and traditional ingredients essential for a memorable dish.
