Mediterranean Spinach, Sun-Dried Tomato & Goat Cheese Meatballs

Ingredients

1 lb lean ground beef 90/10 or 93/7

1 cup finely chopped fresh spinach

¼ cup chopped sun-dried tomatoes oil-packed, drained

¼ cup chopped Kalamata olives

4 oz crumbled goat cheese

1 large egg

½ tsp garlic powder

½ tsp dried oregano

¼ tsp onion powder

¼ tsp salt

¼ tsp black pepper

Optional: 1 tbsp chopped fresh parsley for added freshness.

Method

Preheat oven to 425°F. Lightly grease a baking sheet or line it with parchment paper.

In a large mixing bowl, combine the ground beef, spinach, sun-dried tomatoes, olives, goat cheese, egg, garlic powder, oregano, onion powder, salt, and pepper. Mix gently until just combined. Avoid overmixing to keep the meatballs tender.

Using a cookie scoop or your hands, form the mixture into approximately 2 inch meatballs.

Choose your preferred cooking method:

Option 1

Heat a large skillet over medium-high heat with a drizzle of avocado or olive oil.

Sear the meatballs for 1–2 minutes per side until browned.

Transfer to the prepared baking sheet.

Bake for 12–15 minutes, or until the internal temperature reaches 160°F.

Option 2

Arrange meatballs on the prepared baking sheet.

Bake for 20-25 minutes, or until cooked through.

Broil for the final 2 minutes for a beautifully browned exterior.

Using lean ground beef keeps the meatballs healthier while still juicy and flavorful. The combination of fresh spinach and sun-dried tomatoes adds vibrant color and a rich depth of flavor, while Kalamata olives introduce a pleasant briny note. Goat cheese lends a creamy texture and tang that perfectly balances the savory elements. One tip I’ve found helpful is to avoid overmixing the ingredients — this keeps the texture tender instead of dense. Forming uniform meatballs, around 2 inches, ensures even cooking. You can choose the cooking method that best suits your preferences: searing before baking gives a nicely browned crust, while baking then broiling offers convenience and a crisp finish. For added freshness and a pop of color, consider sprinkling the meatballs with fresh parsley before serving. These meatballs pair beautifully with a simple side salad or over a bed of couscous or quinoa for a complete Mediterranean meal. They’re also great cold or reheated, making them perfect for meal prepping. The garlic powder, oregano, and onion powder create a classic herby flavor profile that enhances the Mediterranean ingredients without overpowering them. Feel free to experiment by adding a pinch of red pepper flakes if you like a little heat. Overall, this recipe brings a tasteful balance of wholesome ingredients and bold flavors, perfect for anyone wanting a quick yet satisfying dinner option.
