✨ Ingredients

• 1 container grape tomatoes

• 2 shallots, quartered

• 8–10 garlic cloves, peeled and smashed

• 1 round Boursin Garlic & Herb cheese

• Olive oil (be generous!)

• Himalayan pink salt, to taste

• Italian seasoning, to taste

• Dried thyme, to taste

• A few handfuls fresh spinach

• 1 package hearts-of-palm linguine*

• Fresh grated Parmesan (for serving)

---

🔥 Step 1: Roast the Veg & Cheese

Preheat oven to 425°F (220°C). In a baking dish, combine grape tomatoes, quartered shallots, and the smashed garlic cloves. Nestle in the whole round of Boursin, drizzle generously with olive oil, and season with salt, Italian seasoning, and thyme. Roast for 25–30 minutes, until tomatoes are blistered and everything is golden and tender.

🍝 Step 2: Prep the Pasta

Rinse hearts-of-palm linguine well under cool water. Boil in lightly salted water for 10–15 minutes. Before draining, reserve about ½ cup of pasta water.

🌀 Step 3: Mash & Mix

Once roasted, mash the tomato, shallot, garlic, and melted cheese mixture directly in the dish. Stir in fresh spinach until just wilted. Toss in the cooked linguine and add splashes of pasta water until your sauce is silky and coats the noodles.

🧀 Step 4: Finish & Serve

Plate it up, sprinkle with fresh grated Parmesan, and enjoy immediately.
