Creamy Tomato Orzo with Meatballs🍅

Ingredients:

• 1 lb ground beef (grass feed 80/20)

• 1/4 cup finely chopped onions

• 1 egg

• 1/4 cup breadcrumbs

• 1 tsp baking soda

• 1 tsp paprika, garlic powder, onion powder, Italian seasoning

• Salt and pepper to taste

• 1 cup cherry tomatoes, halved @sunsetgrown

• 2 garlic cloves, minced

• 1 tbsp tomato paste

• 1 cup orzo

• 3 cups chicken broth

• 1/4 cup Parmesan cheese

• Handful of spinach

Instructions:

1. In a bowl, combine the ground beef, onions, breadcrumbs, egg, and seasonings. Mix until well combined. Form the mixture into small mini meatballs.

2. In a large pan over medium heat, add the meatballs and cook until browned on all sides (about 5-7 minutes) Remove the meatballs from the pan and set aside.

3. In the same pan, add the cherry tomatoes and minced garlic. Sauté for about 2-3 minutes. Stir in the tomato paste and cook for another minute.

4. Add the orzo, chicken broth, adjust with sal and pepper to taste and bring to a simmer.

5. Reduce the heat to low and let it cook until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

6. Once the orzo is cooked, add Parmesan cheese and spinach. Mix until well combined.

7. Serve with the meatballs, topped with extra Parmesan cheese and enjoy!🤤
