We need:
• 2 eggs
• 1/4 sweet/regular potatoes, peeled, diced
• 2oz milk
• 1/4 cup cheddar cheese
• 1/2 tsp oil for cooking
Steps:
1. Boil sweet potatoes until soft
2. Mash em in a bowl
3. Whisk egg, milk, and mashed potatoes
4. Heat oil in a pan
5. Pour the egg mixture into the pan. Scramble em until fluffy and gather em back together. Let the bottom side set, flip, let the other side set.
6. Top em with cheese generously
