CHEESY POTATO SOUP
Sherri’s cheesy potato soup:
INGREDIENTS:
6 medium russet potatoes, cubed. I leave 1 potatoe quartered for better consistency
1/2 cup diced onions (optional)
6-8 cups water (depends on size of potatoes)
4 tsp chicken better than bouillon or instant chicken bouillon
1 brick 16 oz velveeta cheese cubed
Bacon bits to taste
INSTRUCTIONS:
Heat potatoes, onions, water and bouillon to boiling.
Cover and cook potatoes until tender, about 10 minutes.
Place 3/4 of potatoes and water in blender and purée.
Add cubed cheese to remaining potatoes and water still in the pot.
When cheese is melting return puréed potatoes mixture back into pot.
Stir it all together and add salt and pepper to taste.
Serve with bacon bits, oyster saltine crackers and additional shredded cheese if preferred!
