Shoney’s Copycat Strawberry Pie
INGREDIENTS:
1 frozen pie crust (deep dish if you can find it)
1 1/4 cups water
1 1/4 cups granulated sugar
3 Tbsp cornstarch
3 Tbsp dry strawberry gelatin (Jello, 1/2 of 3 oz box)
2 cups sliced strawberries (sliced in half)
Whipped cream, for garnish (optional)
INSTRUCTIONS:
1. Prick bottom and sides of frozen pie crust with fork, and bake according to package directions. If you're worried about the crust puffing up, before baking, place a piece of parchment paper inside the crust and add about a cup of dried beans or rice. Let cool.
2. To a small sauce pan, add water, sugar, and cornstarch and whisk to combine. Heat over MED heat until boiling, reduce heat a bit and simmer several minutes, until thickened.
3. Whisk in dry strawberry gelatin and set aside to cool, stirring occasionally.
4. Wash and slice strawberries, add to cooled pie crust. Pour strawberry gelatin mixture over strawberries. Refrigerate at least 4 hours until set.
Serve cold, with whipped cream

Making a classic strawberry pie like Shoney’s copycat recipe is a delightful way to enjoy fresh strawberries and impress friends and family. One helpful tip I've learned is to ensure that the pie crust does not puff up during baking. As suggested, placing parchment paper filled with dried beans or rice inside the crust works wonders to keep it flat and perfect for filling. This little trick guarantees a more professional-looking pie. When combining the water, sugar, and cornstarch for the gelatin mixture, it's important to whisk continuously and monitor the heat carefully. Bringing the mixture to a boil and then simmering until thickened requires patience but delivers a luscious glaze that holds the strawberries perfectly in place. In my experience, using fresh, ripe strawberries sliced in halves provides the best texture and flavor contrast to the sweet gelatin. If you want to elevate the dessert further, I recommend lightly macerating the strawberries with a little sugar before adding them to the pie crust. This enhances their natural sweetness and juice. For serving, topping the chilled pie with freshly whipped cream is ideal, adding a creamy richness that complements the fruity pie beautifully. This pie not only tastes amazing but is also visually stunning with the vivid red strawberries showcased beneath the glossy gelatin. This recipe is a fantastic choice for summer gatherings, potlucks, or simple family desserts. Its straightforward preparation and delicious outcome make it a favorite among homemade strawberry pies. Plus, using dry strawberry gelatin gives that signature flavor synonymous with the original Shoney’s dessert, ensuring authenticity and satisfaction.
