1. Slice the potatoes thinly (the thinner the better so it cooks faster and gets crispier)
2. Soak your potato slices in salt water for 5-10mins to draw out excess water. Pour away the water and use paper towel to dry your potatoes (keep them dry so the oil wont splatter later)
3. Add oil to pan, lay your potato slices (and sliced mushrooms if you wish) on the pan flatly (image 2). Let it fry until you can see through and slightly brown on the sides.
4. Turn down the heat and add a bit more oil on top of your potatoes if they look dry. Add your 2 eggs in. You can mix the yolk & whites but i kinda just leave it (image 3). Add your salt, pepper, herbs, and grated cheese/mozarella cheese.
5. Fry until the whites are cooked, then flip them in half (image 4). Add more pepper and cheese on top if you want.
This is easier than making rosti. The prep for rosti is so painful cos the potatoes somehow doesnt stick together. With eggs, they will definitely stay as one piece.
