Easy recipes for lazy people pt 16: Rendang Chicken

CUT Butchery is exceeding my expectation!

They got pre-marinated rendang chicken and they also gave the small packet of coconut milk for free to make this dish (see image 2)

The instructions are on the packaging but I think it depends on your fire setting - i followed the instructions and burnt my chicken cos they said simmer for 30mins 🥲 My fire is quite high so what I will do next time is to

1. Add oil cook chicken for about 2mins.

2. Add 100ml water and simmer for 10-15mins. Watch chicken closely and to constantly stir!!

3. Add the coconut milk and a bit of water if it looks dry. Your consistency should look like the satay peanut sauce.

Eat with rice and cucumber and it feels like chicken satay meal 😂

Eat well. Be well. 😉

... Read moreIf you’re like me and sometimes overwhelmed by complex recipes, this easy Rendang Chicken method is a lifesaver. Using pre-marinated chicken from CUT Butchery not only saves time but elevates the flavor without much effort. One tip I've learned is to manage your stove’s heat carefully—high heat can quickly burn the chicken during simmering. Instead, after a short initial fry in oil, adding water and simmering with frequent stirring helps keep the dish moist and prevents sticking. Adding coconut milk towards the end gives the dish a creamy, rich consistency resembling the texture of satay peanut sauce, which pairs wonderfully with plain rice and crisp cucumber to balance the flavors. You can adjust the sauce thickness by adding a bit more water if it gets too dry, ensuring it suits your preference. For those who haven’t tried pre-marinated rendang chicken, it’s worth checking your local Asian groceries or butchers like CUT Butchery that may include small sachets of coconut cream to complete the dish. This approach minimizes prep time while still delivering traditional tastes. Besides, if you want to experiment, adding a squeeze of lime or a sprinkle of fresh coriander can brighten the rich flavors. This recipe is not only for lazy cooks but also for anyone who wants a hassle-free, tasty home-cooked meal. Enjoying homemade rendang is easier than you think when you follow these simple steps and make smart ingredient choices.
