Creamy Mushroom Chicken
This recipe is relatively simple once you have the ingredients. This is for 1 pax:
150g chicken
3-4 mushrooms
half a yellow onion
spinach
lemon
chicken broth
cooking cream
cornstarch (optional, i skipped it)
rosemary/thyme/oregano (optional, if you have it)
butter, 3 cloves of garlic, salt & pepper to season
Steps:
1. Season chicken by sprinkling some salt and pepper. If you have those dried herbs you can sprinkle some too. Pan fry your chicken with butter till fully cooked and brown. Leave it aside in a separate plate.
2. Prep your other ingredients, chop garlic, yellow onion, mushroom. wash spinach.
3. To cook the sauce, using the same pan, add butter, chopped onion, garlic, and mushrooms. Fry until they caramelised/browned. (Add cornstarch here if you have it to make the sauce more starchy. Its fine if you dont have it.) 4. Add 150ml chicken broth, 2 tbsp cooking cream, some salt and pepper. Add a bit of lemon juice, like 1/2 teaspn. Stir and mix them evenly.
5. Add your cooked chicken in and leave it to simmer under low heat for 5mins. Add in your spinach last and cook for another 1 min until the veg softens.
The amazing combi is the chicken broth, cooking cream, caramelised mushroom and onion (spinach for colour). You can use this sauce to cook pasta next time.
