pumpkin veggie chili

I made this quick chili and served it with half a baked potato made in the air fryer. The skin was so crispy! But then I drowned the skin in chili! I also mixed some homemade butter with Italian herbs for my baked potato.

Ingredients

2 tbsp olive or avocado oil

.5 cup chopped onion

1 cup chopped red bell peppers

1 medium chopped zucchini

1 clove garlic

1 tbsp chili powder

1 tsp ground cumin

Salt, pepper, and crushed red pepper to taste

2 cans diced tomatoes

1 can 100% pure pumpkin

1 can canned black beans

1 can canned kidney beans

.5 cup whole kernel corn

Directions

1. Heat vegetable oil in large saucepan over medium-high heat

2. Add onion, bell pepper, and zucchini; cook, stirring frequently, for 5 to 7 minutes or until tender.

3. Add garlic, chili powder, cumin, salt, pepper, and red pepper flakes.

4. Add tomatoes with juice, pumpkin, tomato sauce, beans, and corn.

5. Bring to a boil, cover and reduce heat to low.

6. Stir occasionally for 30 minutes.
