No carbs, just protein and veggies
Here I have some of the leftover chickpea I made earlier this week with some leftover steamed veggies. I cut and sautéd a jalapeño chicken sausage and added that in as well 😋
I know many of you, like me, are always on the lookout for delicious and satisfying meal ideas that fit within the Slimming World plan. One question that pops up a lot is about chickpeas: are they really 'free food'? It can be a bit confusing, so I wanted to share my own experience and understanding to help clear things up! From what I've learned, and how I incorporate them into my own meals, it really depends on the type of chickpeas. Dried chickpeas, when cooked from scratch without any added oil, are generally considered a 'Free Food' on Slimming World. This is fantastic news because they are packed with fibre and protein, keeping you feeling fuller for longer – which is exactly what we want! However, it's a slightly different story for canned chickpeas. Because they are often processed and sometimes have additives or are steeped in briny water, Slimming World officially gives them a Syn value. This can be a bummer if you're used to the convenience of just opening a can! The Syn value isn't huge, usually around 3 Syns for a standard 400g can (drained weight), but it's definitely something to be aware of if you're meticulously tracking your Syns. Personally, I weigh them out if I'm using canned ones to make sure I'm accurate. So, for my recent meal prep, which featured those lovely chickpeas, sliced jalapeño chicken sausage, and a colourful medley of mixed steamed vegetables including carrots, corn, green beans, and peas, I actually used leftover chickpeas that I had cooked from dried earlier in the week. This way, I knew they were totally free and I could enjoy my meal without worrying about hidden Syns! I find cooking chickpeas from dried is surprisingly easy. You just soak them overnight, then boil them until tender. I usually make a big batch and then freeze portions or keep them in the fridge for a few days to add to salads, curries, or even roast them for a crunchy snack. This makes meal prep a breeze, especially when I'm aiming for Syn-free options. If you opt for canned chickpeas for convenience, just remember to count those Syns. But don't let that put you off! Chickpeas are such a versatile ingredient. They're amazing in a hearty curry, blended into a hummus (just be mindful of oil if you're making your own for SW!), or tossed into a vibrant salad. I love how they soak up flavours, making any dish feel more substantial. Adding a lean protein like the jalapeño chicken sausage I used, alongside a generous portion of those mixed steamed vegetables – think crunchy carrots, sweet corn, tender green beans, and little pops of peas – makes for such a balanced and satisfying meal. It’s a brilliant way to get in your Speed Foods and protein without feeling deprived. My top tip? Always check the official Slimming World app or website for the most up-to-date Syn values, as things can sometimes change. But generally, if you cook them from scratch, you're golden! This approach helps me stay on track with my healthy eating goals while still enjoying delicious, wholesome food.
