Homemade protein bagels

This recipe is pretty quick and very easy with only 5 ingredients

Quick Jalapeño Protein Bagels (Yields 3)

Ingredients

• 1 cup All-Purpose Flour (plus extra for kneading) 

• 1 1/2 teaspoons Baking Powder

• 1/4 teaspoon Salt

• 1 cup Cottage Cheese (full-fat or 2%, patted dry slightly)

• 1 medium Jalapeño (finely minced, see Note below) 

• Optional Egg Wash: 1 Egg, whisked (for a golden crust) 

• Optional Topping: A few thin jalapeño slices, shredded cheddar cheese, etc.

Directions (All in One)

1. Prep: Preheat your oven to 375. Line a baking sheet with greased aluminum foil or parchment paper. 

2. Mince Jalapeño: Finely mince the jalapeño. For less heat, remove the seeds and white membrane before mincing.

3. Combine Dry Ingredients: In a medium bowl, thoroughly whisk together the All-Purpose Flour, Baking Powder, and Salt.

4. Form Dough: Add the Cottage Cheese (blended until smooth, or just mashed well) and the minced Jalapeño to the dry ingredients. Mix with a spoon or spatula until a shaggy dough forms. 

5. Knead & Divide: Turn the dough onto a lightly floured surface and knead gently for about 1 minute until it forms a cohesive ball. Divide the dough into 3 equal portions. 

6. Shape: Roll each portion into a short rope (about 5-6 inches long), then join the ends to form a ring, pinching the seam tightly to seal it. Make the center hole nice and wide. Place the 3 bagels on the prepared baking sheet. 

7. Top & Bake:

• Optional: For a golden finish, lightly brush the tops of the bagels with the whisked egg. 

• Add any toppings (like a few thin jalapeño slices or shredded cheese).

• Bake for 20-25 minutes, or until the bagels are puffed and golden brown.

8. Serve: Let the bagels cool for at least 10-15 minutes before slicing. The inside needs this time to fully set.

Rating: Very delicious, have made these bagels two days in a row now because of how delicious and filling they were! Easy customizable.
