Hey foodies! I just had to share my latest culinary adventure with you all, and trust me, it’s a game-changer if you love bold, authentic flavors. I’ve always been fascinated by West African cuisine, and recently I decided to dive deep into making one of its most iconic dishes: Attiéké with Sosso Fish. And wow, was it worth it! For those unfamiliar, Attiéké is a delicious, couscous-like side dish made from fermented cassava, originating from Côte d'Ivoire. It’s light, fluffy, and incredibly versatile, making it the perfect companion for a rich, flavorful fish. My personal journey started with finding a good source for Poisson Sosso, which is essentially a type of whole fried or grilled fish, often snapper or tilapia, seasoned to perfection. I managed to find some beautiful fresh fish at my local African market – always a treat! Preparing the Sosso Fish was an experience in itself. I cleaned the fish thoroughly, then marinated it with a vibrant blend of fresh ginger, garlic, scotch bonnet pepper (just a little for a kick!), salt, and black pepper. Letting it sit for about 30 minutes really allows the flavors to penetrate. Then, I shallow-fried it until the skin was beautifully crispy and golden, and the flesh inside was tender and flaky. The aroma alone was enough to make my mouth water! Next up, the Attiéké. It’s surprisingly simple to prepare. I buy the pre-steamed, dried version, which just needs a quick rehydration and steaming. I usually put it in a steamer basket over boiling water for about 5-7 minutes, fluffing it with a fork halfway through. A tiny drizzle of olive oil or red palm oil at the end makes it even more luscious. The key is to get it light and airy, not clumpy. To complete the meal, I quickly whipped up a simple piment (hot sauce) with fresh tomatoes, onions, more scotch bonnet, and a squeeze of lime. Some sliced cucumbers and tomatoes on the side add a refreshing contrast. The combination of the crispy, spicy Poisson Sosso with the fluffy Attiéké and the tangy sauce is just heavenly. Every bite takes you on a flavorful journey straight to the heart of West Africa.
