Last Night Dinner
Collard 🥬 Mashed🥔 Barbecue 🍗
I recently tried making a dinner inspired by classic Southern flavors, featuring collard greens, mashed potatoes, and barbecue chicken. Preparing collard greens requires a bit of patience; I washed them thoroughly and cooked them slowly with some smoked ham hocks for added flavor, which really enhanced their depth. For the mashed potatoes, I opted for Yukon Golds because their creamy texture blends perfectly without becoming too heavy. A splash of cream and a touch of garlic gave it a rich, comforting taste. As for the barbecue, I marinated the chicken overnight in a homemade sauce with a balance of sweet, tangy, and smoky notes. Grilling it added a wonderful char and depth that paired nicely with the sides. The combination of collard greens' slight bitterness, the silky smoothness of mashed potatoes, and the juicy barbecue creates a well-rounded meal, perfect for a warming dinner to end the day. What I enjoyed most was how the flavors complemented each other without overpowering, making every bite satisfying. This meal is also flexible; you can swap out the barbecue chicken for ribs or pork, and add cornbread on the side for an authentic Southern touch. It’s a great option to prepare ahead and share with family or friends, especially on cooler evenings when comfort food hits the spot. Overall, cooking this meal gave me a deeper appreciation of traditional Southern cuisine and left me eager to make it a regular part of my dinner rotation.
Looks delicious 😋
