Coconut Curry Ramen with Crispy Ponzu Tofu
Crispy Ponzu Tofu
- 1 block firm tofu, pressed
- 3 tbsp Big Tree Farms Ponzu Zing Sauce & Marinade
- oil, for frying
Coconut Curry Broth
- 1 tbsp coconut oil
- 2 cloves garlic, minced
- 1 tbsp freshly grated ginger
- 1 tbsp red curry paste
- 1 can full-fat coconut milk
- 2 cups vegetable broth
- 2 tbsp Big Tree Farms Coconut Aminos
- Juice of ½ lime
For Serving
- Ramen noodles
- Green onions, sliced
- Jalapeño, sliced
- Nori
- Corn
- Hard boiled egg
Instructions
Start by pressing your tofu to remove excess moisture. Cut into cubes or triangles, then marinate with the ponzu zing sauce. Let it soak while you prep the rest of the dish.
In a pot over medium heat, warm the coconut oil. Add garlic, ginger, and red curry paste and sauté until fragrant. Pour in the coconut milk and vegetable broth, then season with Big Tree Farms Coconut Aminos. Simmer gently for 10–15 minutes, finishing with a squeeze of lime.
Fry the marinated tofu in a hot pan with a little oil until golden and crispy on all sides.
