BANANA CLOUD MATCHA 🍌☁️ la la land remake!!

For the banana cloud: I blended together 1 ripe banana (the riper the better), 1/2 cup heavy cream, 1/2 tsp vanilla bean paste, pinch of salt, 2 tbsp coconut sugar (could sub brown sugar), and 1 heaping tbsp of honey until smooth and fluffy—about 30-45 secs.

For the caramelized banana syrup—I cooked down 1 sliced banana, 2 tbsp butter, and 1/4 cup coconut sugar (could sub brown sugar) until bubbling. Then I mixed in a pinch of salt & 1/4 cup heavy cream & combined with an immersion blender until smooth!

I find that the riper the banana, the sweeter and more aromatic the final cream mix becomes, which really enhances the overall drink's richness. When blending the banana cloud, whipping the mixture for about 30 to 45 seconds is crucial to achieve that light, fluffy texture which feels like a cloud on top of your matcha. For those who enjoy experimenting, substituting brown sugar for coconut sugar offers a deeper caramel flavor, while honey adds a nice floral sweetness. The pinch of salt is a game changer; it balances the sweetness and intensifies the banana and vanilla notes. When making the caramelized banana syrup, cooking the banana slowly with butter and sugar allows the sugars to melt and the bananas to soften perfectly, resulting in a syrup that is both silky and full of caramel flavors. Using an immersion blender at the end to combine the cream with the syrup ensures a smooth, luscious consistency that pairs beautifully with matcha. On a personal note, I love to drizzle this syrup over ice cream or pancakes too, as it adds a deliciously sweet and tropical touch. This homemade Banana Cloud Matcha is also very customizable. You can use dairy-free cream alternatives or experiment with spices such as cinnamon or nutmeg for a unique twist. My go-to serving style is pouring the banana cloud blend over chilled matcha tea, creating a visually appealing and tasty layered drink that's perfect for summer afternoons or cozy winter treats.
