I just followed my recipe, but instead of transferring the batter to a 9x9 baking dish, I transferred it to a lined muffin tray!! I filled each one about half way and topped with about 2 tbsp of the crumb topping 🤝 And baked for 25 minutes.
Baking carrot coffee cake in muffin form is not only a fun twist but also perfect for portion control and easy serving. When I tried converting the traditional carrot coffee cake recipe into muffins, I noticed the crumb topping really enhances the texture and flavor by adding a crunchy contrast to the soft, moist cake inside. One helpful tip is to fill each muffin cup only about halfway with batter to allow room for rising without overflowing. Using a lined muffin tray helps prevent sticking and makes cleanup a breeze. I also found that 25 minutes at a moderate oven temperature works well to bake the muffins evenly without drying them out. To ensure the crumb topping holds nicely, packing about two tablespoons on top of each muffin before baking helps create that classic coffee cake crunch. For extra flavor, some bakers like to add a handful of chopped walnuts or a sprinkle of cinnamon to the batter or topping. These carrot coffee cake muffins make an excellent grab-and-go breakfast or a delightful snack paired with coffee or tea. Plus, they’re a great way to sneak in some veggies while indulging in a sweet treat. If you’re experimenting with this transformation from cake to muffin, consider adjusting baking time slightly based on your oven and muffin size—start checking at about 20 minutes and test with a toothpick. Overall, turning your carrot coffee cake recipe into muffins is a simple and tasty variation that’s sure to please your family and friends with every bite.
