Blueberry Protein Muffins 🫐
2 tbsp melted butter
1/4 cup skyr (or greek yogurt)
2 tbsp maple syrup
1 egg
1 tsp vanilla extract
1/2 cup all purpose flour
2 scoops vanilla protein powder
1/2 tsp baking soda
1 tsp baking powder
1/4 cup whole milk
1/2 cup fresh blueberries
Preheat your oven to 350°F and line a 12 cup muffin tin with paper liners or lightly grease with nonstick spray.
In a medium bowl, whisk together the melted butter, skyr (or Greek yogurt), maple syrup, egg, and vanilla extract until smooth.
Add the flour, vanilla protein powder, baking soda, and baking powder. Pour in the milk and stir until just combined, being careful not to overmix. Gently fold in the fresh blueberries.
Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
