Thai Meal: Khao Soi
This is a popular street meal in Thailand and I’ll teach you how to make it at home.
-1 can Coconut Milk (I like the one from trader joe’s!)
-1 small can of Red Curry Paste
-1 cup Vegetable Stock
-Some fish sauce to taste
-Chicken Drumsticks
-Egg Noodles
-Garlic
-Toppings: Fried egg noodles, Limes, Cilantro, Shallots, Pickled mustard greens, Green Onions
Fry the garlic in oil til translucent and then add your curry paste to release the flavor. Then dump your can of coconut milk into the pot. It should be a good simmer at this point. You’re gonna add in your chicken drumsticks. No need to season because the broth will do that for you! Add in the fish sauce and the veggie stock. Salt to taste if you need to. Have that cook on medium low heat for 1.5 hrs.
Make egg noodles separately. Boil those noodles and leave some on the side to fry as a topping.
As you plate the dish add in the egg noodles and then the nice curry broth with some meat. Top with cilantro, lime, fried noodles, and all the fixings you want listed above.
