Swedish Thumb Cookies (Hallongrotta)

Perfect for unwinding after a long day . There’s something rather comforting about baking biscuits that ask you to leave your thumbprint.

These thumb cookies are simple, sweet and a touch nostalgic; the sort of bake that fills the kitchen with warmth.

Soft, buttery and finished with a spoonful of jam –

a little hug in every bite. 🌿💛

Ingredients:

• 1 cup (225g) unsalted butter, softened

• 2/3 cup (135g) sugar

• 2 egg yolks

• 2 tsp vanilla extract

• 2 cups (250g) all-purpose flour

• A pinch of salt

• Raspberry jam (or any jam you love)

1. Mix it up → Beat the butter and sugar together until soft and fluffy.

2. Add the good stuff → Stir in the egg yolk and vanilla until smooth.

3. Flour time → Fold in the flour gently. Stop when the dough feels soft, like playdough.

4. Shape them → Roll small balls, pop them on a baking tray, and press your thumb in the middle.

5. Fill with love → Add a little jam to each thumbprint.

6. Bake + wait → Bake at 180°C for 10–12 minutes, until the edges are just golden.

7. Cool + enjoy → Leave to cool slightly before tucking in (the hardest part!).

These are the biscuits I turn to when I need a gentle pause in the day. Perfect with a cup of tea, a quiet corner and a little stillness.
