When in doubt, make soup — preferably one that wakes up all your senses and clears your sinuses at the same time.
Tom Yum is that perfect mix of sour, spicy, and slightly chaotic, in the best way possible.
You can go two ways: clear (classic) or creamy (cosy). Either way, you’ll feel like you’ve accomplished something impressive — even if it’s just lunch.
✨ You’ll need:
2 cups of chicken broth (or water)
1–2 stalks lemongrass, lightly bashed
2 slices galangal
2 kaffir lime leaves, torn
2–3 Thai chillies (or however brave you’re feeling)
1 shallot, peeled
A few coriander roots (optional but smugly authentic)
5–7 prawns
50g oyster mushrooms
1 Roma tomato, in wedges
¼ white onion, in wedges
1–2 tbsp fish sauce
1–2 tbsp lime juice
A small handful of coriander
For creamy Tom Yum:
½ tbsp roasted Thai chilli paste + ½ cup coconut or evaporated milk

Boil your broth and toss in lemongrass, galangal, kaffir lime leaves, shallot, and chillies. Let them gossip together for 7–10 minutes.
Add mushrooms, tomato, and onion. Let things mingle.
Drop in prawns and lower the heat -they don’t like drama.
Season with fish sauce and lime juice until it tastes like balance (or rebellion).
Turn off the heat, stir in fresh coriander, and breathe in that scent of calm and accomplishment.
