I’m proud to say that I have lost 38 pounds since having my second son. I’m not gonna lie. It’s very hard being a full-time working mom and trying to keep up with working out . I do procrastinate and get tired, I’m not gonna lie . I do try to have a clean diet not a strict one just clean. What are some healthy meals yall make ? Minimal cleanup and maximum flavor! My kids even love helping toss the veggies, which makes them more likely to eat it. For those days when I really don't have time, I rely on 'assembly' meals. This might be a big, vibrant salad with pre-cooked grilled chicken or chickpeas, a quick homemade dressing, and some nuts or seeds. Or even loaded sweet potatoes – just bake a few sweet potatoes ahead of time, and then for dinner, simply warm them up and top with black beans, salsa, avocado, and a sprinkle of cheese. It feels hearty and satisfying, and can be ready in under 10 minutes. Speaking of more special, yet still healthy, options, what about healthy Saturday night dinner? Sometimes, I'll do a 'build-your-own' healthy taco night with lean ground turkey or fish, lots of fresh toppings, and whole wheat tortillas. Or, a homemade whole wheat pizza with tons of veggies and lean protein. It feels like a treat but keeps us on track. The motivation part is tough, right? What keeps me going is remembering how much more energy I have for my kids when I eat well and move my body. Even if it's just a 20-minute walk during my lunch break or a quick living room workout after the kids are asleep, every little bit adds up.
