✨Ingredients

💕Meat & Fillings:

✨1 lb ground beef

✨1 packet taco seasoning

✨Garlic powder

✨Onion powder

✨Tony Chachere's to taste

✨1 medium onion

✨tomato paste

✨1/2 cup diced green chilis

💕Jalapeño Sauce:

✨1/2 cup mayonnaise

✨1/2 cup sour cream

✨3 tbsp pickled jalapeño juice & 2–3 tbsp diced pickled jalapeños

✨1 tsp paprika

✨1 tsp garlic powder

✨1 tsp onion powder

✨1/2 tsp cumin,

✨1/2 tsp salt

✨optional: 1/2 tsp chili powder and 1/2 tsp sugar)

💕Shells, Cheese & Crust

✨6 to 8 medium flour tortillas

✨3 cups shredded Colby cheese (for filling, sauce integration, and outer crust)

💕Garnish & Toppings:

✨Sour cream

✨extra jalapeño sauce

✨diced green peppers

✨cilantro

💕Instructions

1. Make the Sauce: Mix mayonnaise, sour cream, jalapeño juice, diced jalapeños, paprika, garlic powder, onion powder, cumin, and salt until smooth. Set aside.

2. Cook the Meat: Brown the ground beef, diced onions, and green chilis. Drain grease, then simmer with taco seasoning, garlic powder, onion powder, Tony Chachere's, tomato paste and water. Stir in extra onions and green chilies ; remove from heat.

3. Assemble: Layer flour tortillas with Colby cheese, the seasoned beef mixture, a drizzle of jalapeño sauce, and more cheese, then fold into half-moons.

4. Pan-Sear: Heat a skillet with butter or oil. Cook melts for 2–3 minutes per side, adding a handful of shredded Colby cheese to the pan to form a crispy, golden outer cheese crust.

5. Serve: Garnish with parsley , and serve with sour cream.
