15 Minute Sweet & Sour Pork
with Jasmine Rice and Coriander #easydinner
Ingredients:
2 Capsicums
1 Bunch of Coriander
2 Tins of Pineapple Peices
120g of Char Siu Sauce
20g of Corn Flour
600g of Lean Pork Mince
2 Packets of 250 Microwave Jasmine
2 Tbs of BBQ Sauce
1 Tbs of Soy Sauce
1 Tbs of White Vinegar
1 Tbs of Cooking Oil
Pinch of Chilli Flakes (optional)
Method:
1. Cut the capsicums into 2cm chunk. Pick the coriander leaves, discarding the stems. Drain the pineapple pieces, reserving 2 Tbs of Juice. Combine the pineapple juice, chair sun sauce, cornflour, 2 Tbs of BBQ sauce, 1 Tbs of Soy Sauce, 1 Tbs of Vinegar & 125ml of Water in a bowl and season with Pepper.
2. Heat cooking oil in a frypan over high heat. Cook the pork mince and capsicum, breaking up the lumps with a spoon for 3-4 minutes or until browned. Add the sweet and sour sauce, storing for 30 seconds to 1 minute or until the sauce is slightly reduced and glossy. Remove from the heat.
3. Microwave the packet of rice to loose. And tear a 2pm opening for the stem to escape. Heat in the microwave for 2 1/2 minutes or until warmed through.
4. Divide the rice, sweet & sour pork amoung the bowls, scatter with the coriander and a large pinch of chilli flakes (optional) then ENJOY with YOUR MOB. ❤️
TIP: If you can’t get your hands on some “Char Siu Sauce” A substitute is a simple mix of hoisin sauce, honey, soy sauce, and Chinese five-spice powder. This combination captures the sweet, savory, and subtly spicy flavors of the original sauce. ❤️
