Chicken Schnitzel served with Mustard Mayo & Cherry Tomato Almond Salad
Serving: 4 People
Ingredients:
Chicken schnitzel
4 chicken breasts
4 tbsp plain flour
2 eggs
1 cup panko breadcrumbs
1 tsp salt
1 tsp pepper
1 tsp HOYTS Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika powder
Cooking oil for frying
Salad
1 bag salad mix
1 punnet cherry tomatoes (halved)
1 handful slivered almonds
1 lemon
1 tbsp honey
2 tbsp olive oil
Salt & pepper
Mustard mayo
1 cup mayonnaise
1–2 tsp Dijon mustard
Pinch salt
Pinch pepper
Squeeze lemon juice
Method:
1.Slice chicken in half lengthways if thick.
Place between baking paper and flatten with rolling pin.
Set up 3 bowls:
Bowl 1 → flour + salt + pepper
Bowl 2 → whisked eggs
Bowl 3 → breadcrumbs
Dip chicken:
flour → egg → crumbs
Then set aside.
2.Heat frying pan with olive oil on medium-high. Cook schnitzel 3–4 minutes each side until golden and cooked through. Place on paper towel.
TIP: don’t overcrowd the pan.
3.In bowl mix:
juice of ½ lemon
honey
olive oil
salt & pepper
Add salad mix + tomatoes + almonds
Toss well.
4.Mix together:
mayonnaise
mustard
salt & pepper
squeeze lemon
Taste → add more mustard if needed.
Plate schnitzel with salad then add mustard mayo on side. Serve and ENJOY with YOUR MOB! ❤️
